As part of Kids in the Kitchen, Toowoomba’s Grand Central has provided little chefs with a range of fun, easy recipes. These mint choc chip cookie dough balls put a little twist on the usual cookie dough – a real favourite among the little ones.
Cookie Dough Balls
Ingredients
- 500g raw cashews
- 1/2 teaspoon vanilla powder
- 35g butter
- 2 tablespoons honey
- 1 teaspoon peppermint oil
- 1/3 cup of desiccated coconut
- 1/2 cup of raw cacao nibs
Method
- Blend the cashews until they turn into a flour-like consistency
- Add the vanilla, butter, honey and peppermint oil and blend into a smooth dough
- Add the the coconut and cacao nibs and pulse to combine
- Roll into balls and store into the fridge or freezer
Tips
- Do not want to use butter? Use ghee or coconut oil
- Try rice malt or maple syrup instead of honey
- No cacao nibs on hand? Use choc chips
