Head Chef Chris Mann is a Toowoomba boy, born and bred. Having spent the last few years evolving his culinary skills up and down the east coast, he has come home to the Garden City to head up the region’s newest rooftop bistro, George Banks.

“My career has spanned Sydney, the Gold Coast, and Brisbane, as well as Toowoomba. Most recently, I was the Head Chef at Pony Dining at Eagle Street Pier. This was an extremely popular venue with a big team. I was there for over six years and I was constantly inspired by the team of skilled chefs around me,” says Chris. “I am so happy to be back in Toowoomba with my young family. It’s a perfect place to call home (again) and offers such a great lifestyle. We’re only going to add to that by delivering amazing food at George Banks.”

George Banks will focus on a share style menu, changing regularly to properly showcase Toowoomba’s local and seasonal produce. “Having the opportunity to work with great produce and see the passion in the producers gives me great inspiration and ideas. I am always looking for local products to incorporate into the menu. We are using local tomatoes, honey, pork, quail, beef, grains and even local charcoal for our grill,” Chris stated.

Chris also believes that it is important to develop a menu that flows and creates a real dining experience for guests. “We want people to be excited to come back, again and again, knowing they can expect something new. I am looking forward to curating food and beverage dinners with local suppliers, as well as nose-to-tail experiences, special wine evenings and a few other surprises!” Chris added. “My philosophy heading into the role is simple – I just want to cook good food, be creative and lead a great team. I am so excited about what we are achieving at George Banks and looking forward to offering a unique experience to Toowoomba diners.”

George Banks will join the ever-evolving local food scene, serving lunch and dinner, Tuesday to Sunday.
