Self-proclaimed Brisbane barbecue heroes Mike “Mikey” Hilburger, Ralph Barnett and Kris Sweres of Shank Brothers will cook up a storm at this year’s Heritage Bank Festival of Food & Wine to open the Toowoomba Carnival of Flowers from Friday 21 to Sunday 23 September.

The competition barbecue team, who won Channel 7’s Aussie Barbecue Heroes in 2015, consider themselves experts on American-style, low and slow cooking revolution that is taking Australia by storm. Foodies will have the opportunity to learn from the boys when they do daily Hot & Fast demonstrations cooking locally sourced beef, chicken and lamb on the Barbecue Stage. Then back at their festival base, they will be providing samples of their low and slow cuts as well as selling their legendary Picklehead Pickles and Blend Smoked Honey.

Mikey is thrilled to be sharing his tips with festival goers and says that attendees will go home with some sweet cooking skills that will impress the fussiest of dinner guests. “This is our third year at Heritage Bank Festival of Food and Wine and we keep getting bigger. Then again, who doesn’t love a good bit of barbecue?” said Mikey.

Keeping in with the ethos of the Heritage Bank Festival of Food & Wine, the boys will be using meat sourced from local producers in the Lockyer Valley and Somerset Regions – the beef will be provided by Boutique Meats Castell Park in Toogoolawah, the lamb comes from Awassi Queensland in Grantham, the chicken from 9Dorf Farms in Lilydale and the pork from Emperors Pork in Grapetree.
