The Summer Solstice Pop-up Cooking School was held at Bunnyconnellen Olive Grove & Vineyard and was hosted by Peter Simmonds and Cameron Matthews of The Long Apron restaurant, Spicers Clovelly Estate.


Students prepared a variety of dishes and learned some tricks of the trade in time for the holiday season. The day started with a visit to the kitchen garden where students picked fresh herbs and vegetables.


Cameron then showed the class how to create Irish soda bread, butter and pastries. After the morning session, Cameron demonstrated the intricacies of preparing ocean trout and tapioca crackers followed by preparing the pork rillettes.


The class proceeded to enjoy lunch sharing a glass of wine, the main course and dessert prepared by the Bunnyconnellen team.
